Behind the Scenes- The making of a segment...


A while back and I mean a while, i got this email saying hey would you want to do an episode of Galileo Tv.  I said yes, of course, sounds fun!

After about 400 emails well really 500- the shoot was set and my Mom had planned out all the aspects of the segments to shoot here in Memphis. It might seem easy but with everything there are phone calls and asking and email and more emails...

When the Crew arrived they brought me some goodies from Germany and then seriously we got down to work.
They are the top of the game and true professionals. As always it was loads of fun but some serious work and retakes. Understanding how much thought and planning goes into a segment can really blow your mind.
I shared my City with them and sent them to Graceland with Mom, gave them the best BBQ in Memphis at Central and we filmed.

For the first time I created a new spice blend live. It came out perfect to my vision and it was just so much fun to share the creative process with the Crew. For me the evolution of a spice blend has always been done while the cameras were not rolling so to be able to share how I make one was awesome.

I always get nervous for about 10 minutes after I film and worry about the EDIT. I had nothing to worry about, when you work with pros it makes every aspect of a video go from good to the best.

This piece is first class, perfect and I loved it even if I can't speak German!

H.O.T Chicken

When you live in Memphis one of the closest places to visit in the state is Nashville. I love to go to Nashville the city is big and just a lot different than Memphis.


Nashville is known for the famous hot chicken- it is a Crispy fried chicken with a hot oil pored on top after it is cooked.

I had to try it!


I happened to be going to Nashville for fun and I talked dad into trying Hattie B's hot chicken, I could not talk dad into trying the hottest chicken though.

Hattie B's was good crispy and hot- I got mild mom got medium and dad go mild. The hot was better than mild so don't chicken out and try the heat.
I had some amazing Mac and cheese very creamy! And some slaw that was just slaw.


I also enjoyed some black eyed pea salad it was very interesting it had bits of peppers and tomatoes in it. 
We shared a banana pudding and it was really pretty good. It had like a meringue in it and that made it unique.

I loved the graphics of the place and the chickens were just too cute.


Overall I liked it but you really cant beat Gus's for my favorite but it was still really good!

The Ultimate Burger

Memphis Best Burger Fest 2015.






Burger Fest is a big deal in Memphis and is always a lot of fun.
The Burger Fest changed locations from Minglewood plaza to Tiger Lane at the Liberty Bowl, Tiger Lane is a much bigger venue and gives the teams a lot more space to make delicious burgers.
The Festival has grown a lot since I did my first blog post on it.
Unfortunately the weather was not on our side it was very cold and gray but that did not stop the fun and the burgers!
I got to judge the veggie burgers and the regular burgers.
Dad also judged the veggie burgers.
The judging process is very secretive but the veggie burgers were very interesting and definitely gave me some ideas about how to make my veggie burger better.
The beef burgers were tasty and interesting two, the  competition burgers are a lot different than classic burgers just like BBQ.
There were also lots of cool food trucks and fun things to do.
I cant wait for next Best Burger Fest hopefully the weather will be better.

Belly Acres

I was walking around Overton Square one Sunday and saw another new restaurant called Belly Acres and its a farm to table specializing in burgers. Now the name Belly Acres kinda makes me think am gonna get a belly ache, but I decided to take a chance, fortunately I did not get a belly ache afterwords, phew.

The interior is very nice it really went with the theme of the restaurant, there is a plane flying through the wall, they even have a tractor I don't know if it still runs?




I ordered the bison burger with the normal toppings nothing to extreme but I did get some wasabi mayo on the side and for my side I got homemade chips. Making home made chips really good is really hard, and these just were not to good I had side envoy.
Mama's ordered a side of fries and they were the best side even Dad had side envoy.

The burger was pretty good the bison was good, but the bun was a little soggy. The rest of the toppings were really good though.

Dad ordered a grass feed beef burger, dad liked it 

Mama ordered the same burger as dad but ordered the fries, and we were all battling over the fries.
So when you go to Belly Acres be sure to order the fries.

Southern inspired recipe for the Lee Brothers


One of the coolest things about being a kid chef is that you get to meet and research cool chefs. One set of those cool chefs are the Lee Brothers.

The Lee Brothers have southern roots, and they are always pushing the envelope, they also have great cook books.

That got me thinking about this great pimento cheese I make and how could I push the envelope?



So, I decided to make this Pimento Macaroni and Cheese with a corn bread topping, I started with a blend of smoked cheeses 




including: Smoked Gruyere,Smoked Mozzarella,  Sharp Cheddar and Monterrey Jack.  I added half and half and 2 eggs. I then decided on some smoked salt, smoked paprika and pepper. I fire roasted a red pepper and diced it up fine. I used about 3/4 of it.
  
Then I mixed it all together and ladled it into some small square pan I have for an individual portion.


I knew I wanted a cornbread crumb topping so I whipped up a regular Jiffy mix and after it was done crumbled it into a small skillet with butter.

I topped each with some additional cheese and the butter crumbs and baked it up.

Next I thought about a doing some Catfish to go with. I used 1/2 cup of half and half and added some vinegar and some paprika, hot sauce and cayenne. I let the fish marinade a couple of hours. Then I saw those cornbread crumbs and thought why not? I simply dredged the fish and pan fried it.

I know I wanted a hot sauce so I used some Crystals, vinegar, Steen's syrup and butter and cooked it down for the top of the fish.



The cornbread give a nice slightly sweet flavor and the fish was super tender and moist. Pretty Unusual but hey that is why cooking is fun.


I forgot the Lee Brothers have a new Show on Ovation TV and  I cant wait to watch. Maybe I can even get a guest spot!

Masterchef Junior here I come!

I have a secret, I love Chef Gordon Ramsay and all of his TV shows. Last year when I saw Masterchef Junior on Fox I said to myself "well, I can do that"  They had a commercial for the auditions and I said to Dad, Can we go? Now, my Dad loves reality tv almost as much as hamburgers so he said yes.

I filled out all the paperwork and we got accepted to go to Dallas and audition. I am gonna say this again my
Dad LOVES reality TV so he drove me all the way to Dallas to try out!

It took some time then I heard the news. I MADE it!!!!

So,that means basically, I get to be on the show, meet Gordon Ramsay and try my best. I do hope that Chef Ramsay does what he does best and yells at me just a bit! 

I cant tell you how great it will be to meet Chef Elliot and Joe. I have Chef Elliot's autograph and he wrote me a real letter. 





It is SO EXCITING.

So tune in and watch me on Master Chef Junior.


PS. The other best part of the road trip was getting to see my cousin Michael! I love him and we had a great time eating pizza together in TX.

On the Tour Corky's a Memphis Classic


Memphis BBQ Tour Logan Guleff MasterChefYou might know that the BBQ tour t-shirt my Dad and I dreamed up finally got printed and so now I am on "The Tour" to be a Q king.

 I started at Corky's a Memphis icon of great Q. Robert Boyd told me about running the pit long ago and how the business has grown to more restaurants, cookbooks, stores and QVC. 

I mean these folks know BBQ and sell BBQ. 

 Now, I have had Corky's ribs many many times and I can tell you they are very good. They have a great smokey taste and just fall off the bone. I like them dry, of course - I am a Memphian! But the wet are pretty darn tasty too. I like the pulled pork it has a perfect BBQ flavor. The onion loaf, cheese plate and tamales are all good. I just noticed they are selling a cat fish so I ordered that even though I was on the tour the allure of something new could not be passed up. It came out hot and fried. I liked it but the sauce was just a bit too pickley for me. My Mom tried the turkey club also new to us and it looked good. 


 They just put up a new wall decoration and it really has brightened the place up. I loved the coke bottle cap detail.



 If you are from Memphis you have already tried Corky's if your from out of town and think QVC has given you the Corky's experience- try them anyway cause no one tells you about the toasty, buttery sourdough rolls almost the best part of eating there !

Taste The Love at Alcenia's

On a warm July afternoon what is better than Tasting the Love??? Nothing.. Alcenia's is tucked into the north end in a small little building. My Mom thought she had a Groupon for them but she got it wrong so there we were at lunch time. I have to say I was skeptical- I mean the place looked festive with all kinds of colors and chairs but it was a bit empty and I felt almost like I was in someones home. 

We ordered the food and it really took awhile to come out of the kitchen but when it did- Wow was it good. Everything was served on picnicware but the portions were pretty generous and after the first bite I was not complaining. The fried chicken was fresh fried for me and tender. It has some nice spices, The yams were sliced fresh and cooked with some karo syrup cinnamon in and butter. The black eyed peas, one of my favorites were spicy, fresh, flavorful and perfectly cooked. They had some little something in them I have not had before perhaps hominy or ... I just don't know. 


The chicken wings had
a karo syrup hot sauce with some nice herbs and hot peppers mixed in. They were not too hot or too vinegar. The lovely lady there said she hoped I tasted the Love and I did! So if you need a bit of love in your day go fill the place up.
