Hallo Willkommen auf meinem Blog



Behind the Scenes- The making of a segment...


A while back and I mean a while, i got this email saying hey would you want to do an episode of Galileo Tv.  I said yes, of course, sounds fun!

After about 400 emails well really 500- the shoot was set and my Mom had planned out all the aspects of the segments to shoot here in Memphis. It might seem easy but with everything there are phone calls and asking and email and more emails...

When the Crew arrived they brought me some goodies from Germany and then seriously we got down to work.
They are the top of the game and true professionals. As always it was loads of fun but some serious work and retakes. Understanding how much thought and planning goes into a segment can really blow your mind.
I shared my City with them and sent them to Graceland with Mom, gave them the best BBQ in Memphis at Central and we filmed.

For the first time I created a new spice blend live. It came out perfect to my vision and it was just so much fun to share the creative process with the Crew. For me the evolution of a spice blend has always been done while the cameras were not rolling so to be able to share how I make one was awesome.

I always get nervous for about 10 minutes after I film and worry about the EDIT. I had nothing to worry about, when you work with pros it makes every aspect of a video go from good to the best.

This piece is first class, perfect and I loved it even if I can't speak German!

Blue Chef Coat Double Thumbs Up To Blue Apron


Everyone really knows I love to cook and I just kind of create and plan out my ideas and menus in my head. I keep a recipe book, so that I don't forget. I also have a food journal and even a sketch book.

So when I started hearing about companies that send fresh food to your door, I was curious. What would this be like to get a box of food? Easy? Boring? Dull? Expensive?

Blue Apron Junior masterchefI ordered a 3 meal, 2 person plan from Blue Apron and to say I skeptical would be an understatement!

The website was easy to use, the recipes and food looked creative.

My first impressions were very positive.

When my box arrived it was on time and perfectly packaged! The food was in great shape and it all looked really fresh.

Now I am a very adventurous kid chef so to have three new ingredients was very surprising. I had heard of these ingredients, just never cooked them, so that got me even more excited.

First, I prepared the Lamb Burgers with the harrissa spread, and wow were they good. The directions were simple and straight forward, the pictures made it easy to follow.


I don't cook from recipes but I tried my best to stay straight with these.

 Had I been hacking them ,I would have added some mayo or yogurt to the harrissa and used the extra arugula in a side salad with the harrisa as a dressing. 

The carrot side was so simple and good we have made them since. The carrots were seasoned with caraway seeds and cumin. The meal did require some prep work but it was definitely worth it! I really loved my lunch.

It was a thumbs up! And I was starting to get impressed


Next up the Tamarind glazed cod.






The dish has included the glazed cod some zesty rice and a jicama cucumber topping.


I could not resist pan searing one piece of fish, I just needed that extra bit of control, all in all this was a great tasty dish! The tamarind was the new item for me and I really liked it. I plan to buy a bottle for the pantry.

The simple addition of lime zest to the rice just was genius and added a bunch of brightness to the plate.
I had lots of extra jicama and cucumber so I made a salad and that was a bonus.
Another thumbs up!

Last was the baked chicken with potato latkas and celery root.





The celery root was new to me and it was fabulous definitely a buy again! What a pop of fresh flavors! Now, my mom makes the best potato pancakes, so these were just ok for me. But if your mom does not make the best potato pancakes then these would be good.

I liked the apple mustard chutney and have made it several times since.

While one piece of chicken is technically enough for a serving I could have had another.

The roasted cabbage was very unusual and it was also unusual plating.



All in all the roasted veggies, pancakes and chicken made a great meal.

So you ask would I get it again?
Heck yeah! Hot lunch or dinner, fun to cook, easy but just a touch chefie, perfect packaging and ease for a busy schedule! Also this gets you cooking and gets the creative juices flowing!


If you are going to be a loyal Blue Apron customer then I would invest in two or three refrigerator bins to keep all the food together.

I hope to get another box ASAP!

The Ultimate Burger

Memphis Best Burger Fest 2015.






Burger Fest is a big deal in Memphis and is always a lot of fun.
The Burger Fest changed locations from Minglewood plaza to Tiger Lane at the Liberty Bowl, Tiger Lane is a much bigger venue and gives the teams a lot more space to make delicious burgers.
The Festival has grown a lot since I did my first blog post on it.
Unfortunately the weather was not on our side it was very cold and gray but that did not stop the fun and the burgers!
I got to judge the veggie burgers and the regular burgers.
Dad also judged the veggie burgers.
The judging process is very secretive but the veggie burgers were very interesting and definitely gave me some ideas about how to make my veggie burger better.
The beef burgers were tasty and interesting two, the  competition burgers are a lot different than classic burgers just like BBQ.
There were also lots of cool food trucks and fun things to do.
I cant wait for next Best Burger Fest hopefully the weather will be better.

A Whole Lot of Food

One of the cool things about when a new grocery store opens up it brings so many possibilities to a community.
The new Whole Foods in Germantown brings those possibilities to life. 
I have never seen how a grocery store comes from the ground up and seeing some shelves stocked and the shelf right next to it empty is really neat.
I got to meet the team who helps with the opening and they gave me a wonderful tour of the new Whole Foods.
The center piece when you walk in is this fabulous dry ageing show case that easily gives you a 360 view of the dry aging process.
The Whole Foods has like every grocery store, a meat and seafood section, a dairy section, a produce section.
They also have a crepe making section, where they do a verity of sweet and savory crepes.
They also have (my personal favorite of the whole tour)
A Ramen Bar!!!
Now you may know that I love ramen and that there are only 3 or 4 places to get ramen in Memphis and so finding a place that servers it is a big treat!
They also sever some really rock'n and cool sushi burritos,

Now you may be thinking a sushi burrito? Whats a sushi burrito? I definitely was very intrigued. The burritos are kinda hard to explain, but its like a hand roll that you would find in Japan.
The sushi burritos are filled with either fish or chicken or  tofu wrapped in rice and then wrapped in seaweed, they come out to be, well, the size of a burrito.
The sushi burritos were very tasty.
They had several flavors of ramen, including Kimchi, Tonkatsu, spicy Tonkatsu, and many more.
The ramen was very tasty the egg on the ramen can be hard to get the perfect texture with the jelly yoke, the broth was flavorful and delicious super tasty.

The next section is the charcuterie the meats and cheeses were very good they had some smoked goat cheese and other wonderful cheeses and also a very interesting vegan charcuterie.
The Whole Foods also has a custom made espresso machine

So go to the Whole Foods and bring your appetite and then think about something creative for dinner.

Belly Acres

I was walking around Overton Square one Sunday and saw another new restaurant called Belly Acres and its a farm to table specializing in burgers. Now the name Belly Acres kinda makes me think am gonna get a belly ache, but I decided to take a chance, fortunately I did not get a belly ache afterwords, phew.

The interior is very nice it really went with the theme of the restaurant, there is a plane flying through the wall, they even have a tractor I don't know if it still runs?




I ordered the bison burger with the normal toppings nothing to extreme but I did get some wasabi mayo on the side and for my side I got homemade chips. Making home made chips really good is really hard, and these just were not to good I had side envoy.
Mama's ordered a side of fries and they were the best side even Dad had side envoy.

The burger was pretty good the bison was good, but the bun was a little soggy. The rest of the toppings were really good though.

Dad ordered a grass feed beef burger, dad liked it 

Mama ordered the same burger as dad but ordered the fries, and we were all battling over the fries.
So when you go to Belly Acres be sure to order the fries.

Memphis In May World Championship BBQ contest!

Memphis In May World Championship BBQ Contest!

Now, in Memphis, that line means a lot to all of us! Memphis is the best for Blues and BBQ.
I mean if you don't know anything about BBQ, you best MOVE.
It is that serious. Even Veggies have to be smoked and sauced!

Memphis in May is a month long festival that celebrates Music and BBQ and Soul Food.

I knew I wanted to be a BBQ Judge when I was like 5 and after I went to White House, they let me take the Judge's Class, so I would be prepared when they asked me to be a Judge.

Now this is an honor for anyone and I took the job super serious! I brought my A game and tried to be as serious as all the people in the room.

Believe me they were not too easy on me - standards are high, they went from Suspicious to Curious to Respectful to Happy!

I ate. I judged. I upheld the long line of BBQ lovers and hopefully made Memphis proud.

I know you may not understand the depth of the Honor I was given, but trust me I did!
All I can say the food was good. ok, out of this world! I judged exotics, beef, seafood, RIBS, and WHOLE HOG! I mean The Shed won the entire thing, I might have helped judge that!

Bam! Cooking for Make-A-Wish!

Ok, Memphis, if you have not tried Felecia Suzanne your missing something special. Chef Felicia was Emeril's Bam apprentice and she runs one of the tightest kitchens in Memphis. She is in the kitchen expatiating and really working the line.

She invited me to do a fund raiser Dishes for Wishes and tossed in this exclusive dinner in her kitchen. Now most Chefs try too keep folks out of the Kitchen but Chef Felicia opens hers up on a regular basis and it is entertainment to the max.

She let me make up some menu items and BAM! we were off!

If you missed it you missed a TREAT!

I, then went back a few weeks later for the Dishes-For-Wishes main event and I had even for fun. Cooking and Serving and helping wishes come true. If you don't know Make-A-Wish provides wishes for kids who are sick. I mean how cool is that.
