My Chicken and Waffles Recipe


When you get invited to do a spot for the Oscars-- first thing you do it think "what do I wear" LOL
Not a problem for a Chef.... I worried what will I cook?!

This was a great fun day and I had a blast- sorry it took so long for me to write! I am trying to get back in the swing of blogging!

Sweet, Hot and Low Jazz Chicken and Waffles (Inspired by Whiplash)



Drummies

Ingredients

20 chicken Drummies part of the chicken wings
3 cups buttermilk
Salt and pepper
2 eggs
1 cup buttermilk
1 1/2 Tablespoons Franks Hot Sauce
2 cups flour
1/2 teaspoon Hungarian Paprika
1/2teaspoons Onion Powder
1/4 teaspoons black pepper
1/4teaspoon salt


Directions
1.    Season the drummies with salt and pepper, then drop into 2 cup buttermilk, and marinade for 2 hrs in refrigerator.
2.    After marinating, remove the drummies and pat them dry on paper towel.
3.    Dredge the Drummies in flour mixture (3 cups flour, 1/2teaspoon Hungarian Paprika, ½ teaspoons Onion Powder, 1/4teaspoons black pepper, and ¼ teaspoon salt)
4.    Make egg mixture which consists of 2 eggs, 1 cup of buttermilk, and 1 1/2 Tablespoons Franks Hot Sauce.
5.    Create flour mixture which consists of 3 cups flour, 1/2teaspoon Hungarian Paprika, ½ teaspoons Onion Powder, 1/4 teaspoons black pepper, and ¼ teaspoon salt
6.    Dredge drummies into the egg mixture and then back in the flour.
7.    Dredge the drummies again in the flour mixture. This should make a thick coat  on the drummies.
8.    Set on a rack and prepare to fry.
9.    Heat 3-4 cups of Oil (peanut) to 325 F degrees in a skillet and fry the drummies until brown.
Temperature of the meat should be 190 degrees F (roughly 10 minutes).




Jazz Honey

Ingredients
4 Tablespoons Butter
4 Tablespoons Honey
1/4 Teaspoon cayenne powder
1 teaspoon chili powder
1/2 teaspoon powdered garlic

Directions
Melt butter in small sauce pan, add in honey and melt the two together by stirring. Then, add in the spices and continue to stir. This should be served warm. Be careful not boil the sauce.





Savory Cornmeal Waffles with Herbs

Ingredients
4 Tablespoons butter melted and let cool
1 cup cornmeal (stoneground)
1 cup flour
2 tablespoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 teaspoon of sugar
2 cups buttermilk
2 large eggs
½ teaspoon basil
1/2 teaspoon oregano
½ teaspoon thyme

Directions
1.Heat waffle iron and spray with cooking spray before using.
2. Mix dry ingredients together in one bowl.
3. Mix wet ingredients together in another bowl.
4. Combine the two together and stir until just blended.
5. Scoop into the waffle iron and cook until brown.
6. Assemble the dish by plating the hot waffle topping with the drummies and drizzling with the spicy jazz honey sauce.


**You can decrease the heat (spiciness) with less cayenne or knock it up by adding more.

Taste the Mediterranean in Memphis.Petra Cafe

Not too long ago Jennifer Biggs a good friend of mine asked me to come with her to taste the Mediterranean at the new Petra cafe on Sanderlin Ave.
Its a slightly fancy place with an inviting atmosphere. They have a very beautiful lamp from Syria and I know a big secret about it too.
We ordered a sampler appetizer it had hummus,eggplant dip and taboulleh.
The hummus was high quality. It was smooth and creamy and very nice, the eggplant dip was very flavorful it had some tomatoes and olive oil. The tabolleh was a new flavor for me, it tasted very green. It had bulgar in it.


For the main course I had a Gyro with no onions, Jennifer had the Sicilian Panini, and my Mom had the Spanakopita a Greek spinach pie. We also got the lamb salad and the lamb shank.
My Gyro was very good the taziki sauce was very tasty with dill and other flavors and I really, really liked it.It was loaded with meat and over all very tasty. I would order it again. I just wish it had a bit of lettuce to add some crunch.  The Panni had salami, provolone cheese, spicy mustard and basil on a ciabiatta bun. It was a favorite but the best is yet to come.
The lamb salad was beautiful and just as the name says it was a salad with chunks of lamb on the top. It was loaded with goodies. Tasty!

If you want a treat you have to get the lamb shank! It was clearly the best thing on the table. A braised lamb shank on a bed of rice. The rice was high quality round rice not the cheap flat kind. The meat was so tender you did not need a fork. It fell right off the bone. It had hints of cinnamon and other spices and was slightly sweet, complimenting the lamb flavor. It was so exquisite that the next day Mr. Douba let me into his kitchen to watch how he made it!!! Can you Believe it?

Now I love being in the kitchen and restaurant kitchens are the coolest ever. I diced up some veggies and watched the secret stock form before my eyes. The smell was delicious and I was honored to be there, learning the ins and outs of the exquisitely delicious lamb shank!  Now the recipe is top secret and if I tell you he wont let me back into his restaurant and that would be terrible. So go now and have that lamb shank before he sells out!


Off to find some lamb shanks to cook.

1 Burger and 5 Friends= 5 Guys Burgers and Fries

I go to Five Guys Burgers and Fries when I need food and I need it Fast. Now, this is not the most special kind of place, first off it is a chain. A good one: serving better quality food at a slightly higher price. I mean we all need fast food sometimes and that is when you want to go there.
They have a simple menu of Burgers built to your order and cooked fresh, Hot dogs, and Fries. I think because it is so simple it is easy to keep the food quality high and the customers like me happy. I usually get 2 patties that is there regular. The one patty just isn't as meaty. I like cheese, pickles, ketchup, lettuce, and tomato. Some of the other choices are mushrooms, onions, grilled onions, A1 sauce, mustard just to name a few.
 I also get the seasoned fries. They have a a little bit of bay season with a bit of cajun and I really like them better than the plain. I also LOVE that they tell you where the potatoes come from. It connects me to the farm and makes them seem fresher and tastier.
They have one of those cool coke machines and i love all the buttons.

Bonus- At Five Guys you can get a big scoop of roasted peanuts to munch while they cook your food. How fun is that?

I have a tough Assignment for You Elwood's Shack

How do you eat through a menu?
Left to right?
Top to bottom?
Breakfast to lunch?
Or do you start with the specials?
How?

Well I have a solution, just try to go as often as possible and try something new every time.
Eventually you will eat though a menu and you will know what's good and what's really good.


That's my plan for Elwood's menu, I mean what is better the fish tacos,the clam chowder,or the brisket sandwich, there are just too many choices.

So it was my 3rd time going and I saw the specials and it had every thing I like including: clam chowder a must have and a new favorite ops!
I guess I am suppose to be telling you what I got and not how it was.

Well, I got the clam chowder, the Ruben, and the tamales. My Dad got the brisket sandwich.
Starting with the clam chowder it was perfectly exquisite and better than Boston. It is now my favorite.
Next the Ruben, first they house cure there own pastrami. I mean who else does that?
It was good but lacked that New York rye bread, which would have put it over the top! The beef was the best.
The tamales were good, but not the best item I ordered. They were covered in Chili and very fresh pico. They tasted great just not clam chowder great.



 

Dad said the brisket sandwich was good but I did not try it. I was too busy eating the clam chowder.  

1st and my favorite clam chowder it was creamy. You could tell there were clams in it and everything was the same size, deliciously delectable.
2nd fish tacos just yummy.
3rd brisket wrap tasted better than the brisket I had in Texas that says it all.
I'll keep you posted if my order changes.

Oh yeah, Jessica knew my name when I walked in!!! How cool is that?!

La Michoacana



I went to ,Taqueria Camino De Michoacan not to be confused with theMichoacana ice cream one but a mexican restaurant and bakery off Jackson Ave.  It was a nice place they had a bakery and a lot of sweet yummy looking things like: some weird doughnuts, buns, rolls, and a bunch of other stuff that I looked at but couldn't understand.
It all looked SO good  I couldn't pick but I decided on a doughnut. It was cool but not quite me, to be truthful I don't much like sweets. It has a more doughy texture than an American doughnut. It had a nice sweet icing  and it was very pretty. 






Now back to the meal, they had three different salsas one of the three is a regular salsa,just your basic salsa, another one is a green salsa which I didn't like it, not me, and last one was  a smoky spicy salsa which was quite enjoyable.  I shared a torta with my Mom it was ok. It was on nice soft bread, spread with beans and carne asada. I like the one at La Guadualapana better but we did eat it all.
My Dad had some kind of steak thing it look kinda good but my Dad REALLY loves steak so he ate it ALL so unfortunately I did not get a bit. (so sad)
Overall it was good but with so many Mexican places to try in Memphis, I am not sure how soon we will go back.

Huey's a Memphis tradition.

                             If you live in Memphis you have probably gone to Huey's, it's a Memphis tradition.

So as you can tell the place is all in the vibe, but its a nice place to go and hang out.




                                                                
It's all in the atmosphere and having a good time.







I like their pickles and the kids meals come with free ice cream, you just can't beat that!
I usually get the cheese burger, but I really just want pickles. I like them.
My Dad gets the Senor Huey burger, I never tried it so I cant say if it is good. My Dad really does like it.
My Mom gets the cheese burger just like me.



The food is not too special. However the Burgers usually win the Best Burger of Memphis. I think it is because we just all like to go there.
To wrap it up the food is so so, but the vibe is cool.

Boscos of Overton Square


A recent craving brought me to Boscos, this microbrewery is in Overton square.
The square is in a new revitalization but this old microbrewery has not changed much over the years, it's still going strong as a tradition in the square and midtown.

Our table ordered two pizza's: we ordered the Chesapeake, the Palermo.
I chose the Chesapeake, it had shrimp, fresh shell fish, and bay scallops, with a pesto sauce and white cheddar cheese. It had a alot of flavor. The Chesapeake pizza is like the sea under a microscope.I am not sure I would have made it the same way but it was good.
The Palermo it had pepperoni, sausage, and  portabella mushrooms.

I didn't have a slice of it, unfortunately. My Dad liked it and ate it all.
They gave us some fresh focaccia bread served with an olive oil and herb dip.

I liked my dinner- I think it might be a better spot if you could try the beer but I can't do that yet. The brewery equipment looked really cool though.

A Shack that could be any 4 Star- Elwood's Shack

Ok, I was a bit skeptical...









My recent culinary adventurer brought me to Elwood's Shack,this little shack is bursting with flavor.

It's in the Lowes parking lot on Perkins,and like its name says its a shack... fun!

I ordered the fish tacos. They were 2 HUGE fish tacos, I mean huge. they were made with a 10 inch long flash fried flour tortilla. My mom got a brisket wrap sandwich but she had lunch envy. The fish was steel head trout, it had nice a texture. It also gave the taco a fresh taste. They had it seasoned and topped with fresh avocado and salad stuff. There was a real nice chewy cheese in there. I am not sure what kind.
Overall a great fish taco. My Mom thinks the best she has had.












The brisket wrap sandwich was a great. It was HUGE. There were some peppers and onions in it and a nice cheese.
The owner was a nice guy he talked to me about how he's from Texas and his brisket is marinade in Guinness stout and makes an interesting tex-memphis combo. Really, it is quite interesting.
  We swapped some cooking stories and he kindly gave me a sample of his spice rub to try at home. He sells it too. I hope to go back soon and bring them a sample of my rub.
So if you are HUNGRY and really want to fill up check out the Shack- Elwood's Shack. It is the place to be.

PS. I HAD to go back to Elwood's- I am planning to eat my way through the menu! I tried the meatball sub and the roast beef sandwich. Good, but not Fish Taco good!
